I made my first cake after finding a design in a magazine. I wanted something special to surprise my mother when she came home from her father’s funeral. It was a simple bunny cake, but it started everything. From that day on, I was always baking, searching for the next recipe and learning as I went.
I haven’t really stopped baking since.
In 2008, I moved to Ireland with my young little family. Without the American ingredients I was used to, I learned to adapt and work with what I could find. Over time, that became my style,combining American baking with Irish ingredients.
I built this bakery while raising my three boys as a single mother, turning something I loved into a way to support my family. Late nights baking, early mornings at markets, and plenty of cold days selling my baked goods while spreading the word. and building Miss Molly's to what it is today.
Today, one of my sons helps run the business, keeping it truly family-run.
A lot has changed since that first bunny cake, but the reason hasn’t, I bake because I enjoy the process and take pride in the results. Nothing beats seeing a child light up when they see their special cake for the first time
